Salt-cured roe from sturgeon. That's the whole definition. Roe from salmon, trout, or whitefish is delicious, but it isn't caviar — it's roe. We only sell sturgeon.

Siberian is where most people should start. Clean, nutty, a little buttery, unmistakably caviar without shouting about it.
Kaluga Hybrid is bigger pearls and a longer finish. Creamy, faintly sweet, the one that converts skeptics.
Osetra is the classic. Firm pop, deep flavor, that hazelnut note people write about. Our most expensive tin and worth it when the moment calls for it.

Lightly salted. From the Russian for "little salt" — under 5% salt by weight. It means the salt is there to season the roe, not to preserve it or hide behind. Less salt, more caviar, shorter shelf life. Worth the trade.

Genuinely, yes. It's a dense source of protein, omega-3 fatty acids, B12, vitamin D, selenium, and iron. It's also high in sodium, so it's a spoonful, not a meal — which is how you were going to eat it anyway.

New tins restock Thursdays at 9:00 AM PT. Every order takes 2–3 business days to pack — we're a small team and we do it by hand. Shipments go out Priority Overnight on Wednesdays and Thursdays.

Nationwide. We can't ship to PO boxes — perishable orders need a real address.

No. They're supposed to be. We pack every order to stay cold for 48 hours, and the ice doing its job means the ice worked. If the tin is cold to the touch, you're fine. Put it in the fridge.

You don't need to sign, but you do need to get it inside. Caviar left on a porch in the sun is caviar you'll be disappointed by. Ship it somewhere you'll be — office, doorman, neighbor who owes you.

Email us at info@prlcaviar.com within 24 hours with photos, and keep the packaging exactly as it arrived. We'll file the carrier claim and make it right with a replacement or a refund on the product.
